Metafoodx Joins the Menus of Change University Research Collaborative


Metafoodx is proud to join the Menus of Change University Research Collaborative (MCURC), a global network of colleges, universities, researchers, and foodservice organizations working together to advance healthier, more sustainable campus dining.

Founded by Stanford University Residential Dining & Enterprises, the Stanford Prevention Research Center, and The Culinary Institute of America, MCURC connects higher education dining leaders with researchers and industry partners to develop practical, evidence-based solutions that improve foodservice operations and create lasting environmental impact.


For more than a decade, MCURC has helped universities translate research into operational improvements through collaborative projects focused on plant-forward dining, food waste reduction, procurement, and behavior change. The collaborative now includes more than 80 colleges and universities representing millions of meals served each day, creating one of the largest living laboratories for sustainable foodservice innovation.


The collaborative's emphasis on measurable operational outcomes closely aligns with Metafoodx's mission of helping commercial kitchens make better decisions using data. By providing objective insights into food production, consumption, overproduction, and waste, AI-powered kitchen intelligence can help dining teams better understand their operations while supporting both financial and sustainability goals.

Metafoodx looks forward to collaborating with university dining leaders, researchers, and fellow industry partners to advance practical solutions that help campuses operate more efficiently while reducing food waste.


As part of its participation, Metafoodx will attend the 2026 MCURC All-Member Meeting, taking place October 5–7 at the University of Michigan, where members from across the collaborative gather to share research, operational insights, and emerging best practices in sustainable campus dining.
