The Summer 2026 edition of Campus Dining Today®, the flagship publication from the National Association of College & University Food Services (NACUFS), is now live.


This issue takes a close look at how campus dining programs are using technology, data, and operational innovation to run better kitchens and improve the student dining experience, from mobile ordering and food waste tracking to connected systems and smarter facility design.

AI in Action at Cal Poly Pomona


Cal Poly Pomona serves around 3,000 guests a day across its dining program. When Executive Chef Kristopher Arguin joined the team, he inherited a kitchen still running on legacy systems and menus that hadn't changed in decades. Over the past four years, his team has rebuilt CPP Dining into a multi-concept, scratch-heavy program, using AI tools at several points in the process, including recipe development and food waste reduction.

Metafoodx functions as an automated scanning station in the back of house, using computer vision, weight sensors, and temperature sensing to track food as it moves through production. Instead of relying on manual logs or guesswork, kitchen staff get a real-time, item-level view of what's being made, what's being thrown out, and where overproduction is happening.



That kind of visibility is showing up in results across other NACUFS member campuses as well. At Pomona College, dining services used Metafoodx to identify which items were consistently overproduced, including Mexican rice, pollo asado, and broccoli, while confirming that Caesar salad, yogurt, and Mexican rice were among the most-consumed foods on the menu. With that information, the team made targeted adjustments rather than an across-the-board cut in production. The result: a 54% reduction in overproduction, an 8% drop in plate costs, and more than 500% ROI over nine months.


Why This Matters for Campus Dining Programs

Food waste is a persistent, expensive problem in commercial kitchens, and college and university dining halls are no exception. Serving thousands of meals a day across multiple stations makes it hard to know, at a granular level, what's actually being consumed versus what's being produced and discarded. That gap shows up directly in food cost, labor time, and sustainability reporting.


The NACUFS Summer 2026 issue frames this as part of a larger shift in campus dining: programs are moving from static, generalized planning toward data-informed, item-level decision making. Mobile ordering platforms, connected kitchen equipment, and AI-driven scanning tools are all part of that same shift, giving dining directors and chefs more precise levers to pull when it comes to production planning, labor allocation, and waste reduction.
