An Executive Sous Chef at a Dining Hall at a leading Southern California University, recently shared his experience using Metafoodx to tackle over-prepping, reduce food waste, and streamline kitchen operations. Here's what he had to say:

Before working with Metafoodx, one of the biggest challenges I faced was managing the over-prepping of certain items, which led to a lot of unnecessary waste. For example, the team was preparing up to 8 pans of black beans per day, but we were only using 2 pans per service. This mismatch wasn't limited to just the black beans; similar inconsistencies occurred with other items like chicken, garbanzo beans, and bell peppers. Since we weren't closely tracking the quantities used, it became a real challenge to align our prep with actual demand.

 

After working with Metafoodx, it’s much easier to track the real-time needs of our salad bar items and adjust our prep accordingly. We've been able to catch the pattern of how much of each item is actually needed, which has streamlined our process and reduced waste significantly.

 

To someone considering Metafoodx for their own dining operation, I would say it’s an incredibly useful tool, especially when you're managing a high-volume operation. In the short time we've used it, we've already seen significant improvements. The biggest challenge was getting the team accustomed to using the equipment properly, but once we got over that learning curve, it’s been a game-changer. Metafoodx has definitely helped with reducing waste and has allowed us to focus on prepping the most popular items that our guests demand the most.

As an all-you-care-to-eat facility with a wide variety of menu items, it can be challenging to keep track of everything. Metafoodx has made it much easier to monitor what’s being used and what needs more attention in terms of prep, helping us stay efficient and avoid over-prepping. I highly recommend it to any operation looking to optimize their food prep process.
